Ingredients

  • 2 and 1/4 tsp active dry yeast
  • 2 tbsp brown sugar
  • 1 and 1/2 cups warm water
  • 4 and 1/2 cups flour
  • 1/4 cup olive oil
  • 2 tsp salt
  • 6 cups water (for boiling)
  • 2 tbsp baking soda
  • 1 egg
  • Coarse salt (for topping)
  • Everything but the bagel seasoning (optional)

Instructions

  • Activate the Yeast: In a stand mixer bowl, combine warm water, yeast, and brown sugar. Let sit for 5-10 minutes until foamy.
  • Mix the Dough: Add flour, olive oil, and salt to the yeast mixture, then knead for about 5 minutes until the dough forms a smooth ball.
  • Let the Dough Rise: Cover the dough and let it rise in a warm place for 1 hour, or until it doubles in size.
  • Shape the Pretzels: Punch down the dough, divide it into 12 equal pieces, and roll each into a rope. Shape each rope into a pretzel.
  • Boil the Pretzels: Preheat the oven to 450°F (230°C). In a large pot, bring water and baking soda to a boil. Dip each pretzel in the boiling water for 15-30 seconds.
  • Bake the Pretzels: Place the pretzels on a parchment-lined baking sheet. Brush with an egg wash, then sprinkle with coarse salt and optional seasoning. Bake for 10-11 minutes or until golden brown.
  • Serve: Cool on a wire rack and enjoy with your favorite dip.

Notes

  • For Garlic Parmesan Pretzels, brush with garlic butter and sprinkle with Parmesan before baking.
  • For a Sweet Twist, add cinnamon sugar after baking.
  • Cheesy Pretzels: Top with shredded cheese or jalapeños for added flavor.
