A classic comfort food dish featuring juicy beef patties simmered in a rich mushroom gravy. Homemade Salisbury Steak with Mushroom Gravy is hearty, flavorful, and perfect for family dinners or nostalgic weeknight meals.

Ingredients

  • 1 1/2 lbs ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tsp Dijon mustard
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil or vegetable oil (for searing)
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 1 small onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp cornstarch (or flour)
  • 3 tbsp water
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground beef, egg, breadcrumbs, Worcestershire sauce, ketchup, Dijon mustard, onion, garlic, salt, and pepper. Mix gently until just combined.
  2. Shape mixture into 4–6 oval patties.
  3. Heat oil in a large skillet over medium-high heat. Sear patties on both sides until browned, about 3–4 minutes per side. Remove and set aside.
  4. In the same skillet, melt butter. Add mushrooms and onions, cooking until softened and golden, about 5–6 minutes.
  5. Stir in garlic and cook for 1 minute.
  6. Pour in beef broth and Worcestershire sauce, scraping up browned bits.
  7. Whisk cornstarch with water to make a slurry. Stir into skillet and bring to a simmer until thickened.
  8. Return patties to skillet, spoon gravy over them, cover, and simmer on low for 10–15 minutes until patties are cooked through.
  9. Remove lid, adjust seasoning, and serve hot with mashed potatoes, rice, or noodles.

Notes

  • Don’t overmix the beef mixture to keep patties tender.
  • Baking option: cook patties at 375°F for 20–25 minutes, then finish in gravy.
  • For extra richness, add a splash of heavy cream to the gravy.
  • Make gluten-free by using gluten-free breadcrumbs and cornstarch.
