Homemade Pretzel Bites are soft, chewy, golden-brown nuggets with a lightly crisp exterior and classic salty finish. Perfect for snacking or entertaining, these bite-sized treats deliver authentic bakery-style flavor at home.

Ingredients

  • 1 1/2 cups (360 ml) warm water
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 tablespoon granulated sugar
  • 4 cups (500 g) all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup (60 g) baking soda
  • Coarse salt, for topping

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  2. Add flour, salt, and melted butter. Mix until a dough forms.
  3. Knead the dough for 5–7 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover, and let rise for about 1 hour or until doubled in size.
  5. Preheat the oven to 425°F (220°C) and line baking sheets with parchment paper.
  6. Bring a large pot of water to a boil and carefully stir in the baking soda.
  7. Divide the dough into sections, roll into ropes, and cut into bite-sized pieces.
  8. Boil the pieces in the baking soda water for 20–30 seconds, then remove with a slotted spoon and place on prepared baking sheets.
  9. Sprinkle with coarse salt.
  10. Bake for 12–15 minutes until golden brown.
  11. Remove from the oven and brush with additional melted butter if desired. Serve warm.

Notes

  • For garlic pretzel bites, brush with melted butter mixed with minced garlic and parsley after baking.
  • For cinnamon sugar bites, skip the salt and toss warm pretzels in melted butter and cinnamon sugar.
  • Store at room temperature for up to 2 days or freeze for up to 2 months.
  • Reheat at 350°F (175°C) for 5–8 minutes to restore softness.
  • The baking soda bath is essential for achieving the signature chewy crust.
