Ingredients

  • 68 small pizza bases (English muffins, mini pita rounds, bagels, or tortillas)

  • 1 to 1 1/2 cups shredded mozzarella cheese
  • Assorted toppings: pepperoni, bell peppers, olives, mushrooms, etc.

  • 1 tsp dried oregano or basil (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place mini pizza bases on a parchment-lined baking sheet.
  3. Brush or spray the tops with olive oil.
  4. Spread a thin layer of pizza sauce over each base.
  5. Sprinkle shredded mozzarella evenly on top.
  6. Add desired toppings like pepperoni, mushrooms, or bell peppers.
  7. Season with dried oregano or basil if desired.
  8. Bake for 8–12 minutes until cheese is melted and bubbly and edges are golden.
  9. Remove from oven and let cool slightly before serving.

Notes

  • Use a variety of bases like mini naan, tortillas, or gluten-free options.
  • Don’t overload with sauce or toppings to keep crust crisp.
  • Prep toppings in advance for quicker assembly.
  • Freeze assembled (without cheese) for later baking.
  • Great for lunchboxes, parties, or DIY pizza nights.
