Ingredients

  • For the cupcakes:

  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup whole milk
  • 1/3 cup rainbow sprinkles (jimmies style)
  • For the frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 12 tablespoons milk
  • 1 teaspoon vanilla extract
  • Extra sprinkles for decorating

Instructions

  1. Preheat oven to 350°F and line a 12-cup muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. Beat softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  5. Gradually add dry ingredients alternating with milk, beginning and ending with flour mixture. Mix until just combined.
  6. Gently fold in sprinkles without overmixing.
  7. Divide batter evenly among liners, filling about two-thirds full.
  8. Bake for 18–20 minutes until a toothpick inserted in the center comes out clean.
  9. Cool completely before frosting.
  10. For frosting, beat butter until smooth, gradually add powdered sugar, then mix in vanilla and milk until fluffy.
  11. Frost cooled cupcakes and decorate with additional sprinkles.
