Ingredients

  • ¾ cup white sugar
  • 3 tablespoons cornstarch
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 4 cups fresh blueberries
  • 1 (14.1-ounce) package double-crust pie pastry, thawed
  • 1 tablespoon butter

Instructions

  • Preheat the Oven – Place an oven rack on the lowest level and preheat to 375°F (190°C).
  • Prepare the Filling – In a bowl, mix sugar, cornstarch, cinnamon, and salt. Sprinkle this mixture over the fresh blueberries and toss to coat.
  • Assemble the Pie – Roll out one pie crust and place it in a pie dish. Pour the blueberry mixture into the crust and dot the top with small pieces of butter.
  • Create the Lattice Crust – Cut the remaining pastry into ½- to ¾-inch-wide strips. Lay the strips over the filling, weaving them into a lattice pattern. Crimp and flute the edges to seal.
  • Bake – Place the pie on the lowest oven rack and bake for about 50 minutes, or until the filling is bubbling and the crust is golden brown.
  • Cool and Serve – Let the pie cool for at least 2 hours before slicing to allow the filling to set.

Notes

  • If the pie crust starts browning too quickly, cover the edges with aluminum foil to prevent burning.
  • Using fresh blueberries provides the best flavor, but frozen blueberries work well too—just don’t thaw them before mixing.
