Herbed Fries are crispy, golden fries tossed with a fragrant blend of fresh herbs, garlic, and seasoning. They’re a flavorful and aromatic twist on the classic fry, perfect as a side or snack.

Ingredients

  • 4 large Russet potatoes or 1 bag frozen French fries
  • Vegetable oil (for frying or baking)
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme, finely chopped
  • 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
  • Salt and black pepper, to taste
  • 12 tablespoons olive oil or melted butter
  • Optional: 2 tablespoons grated Parmesan cheese
  • Optional: 1 teaspoon lemon zest

Instructions

  1. If using fresh potatoes, wash and peel (optional), then cut into even sticks. Soak in cold water for at least 30 minutes, then drain and pat dry.
  2. Fry potatoes at 300°F (150°C) for 4–5 minutes, remove and rest, then fry again at 375°F (190°C) for 2–3 minutes until golden and crispy. Alternatively, bake at 425°F (220°C) for 25–30 minutes, flipping halfway.
  3. If using frozen fries, cook according to package directions until golden and crispy.
  4. In a small bowl, combine chopped herbs, garlic or garlic powder, salt, pepper, and olive oil or melted butter.
  5. Place hot fries in a large bowl and toss with the herb mixture until evenly coated.
  6. Optional: Top with grated Parmesan cheese or lemon zest for extra flavor.
  7. Serve immediately while hot and fragrant.

Notes

  • Fresh herbs add the most flavor, but dried herbs can be used in smaller amounts.
  • Toss fries with herbs right after cooking to ensure even coating and best flavor.
  • Double-frying yields the crispiest texture for fresh-cut fries.
  • Try sweet potatoes or air frying for a variation on the classic base.
  • Pair with a dipping sauce like garlic aioli or herbed yogurt dip.
