Golden, crispy herb roasted potatoes tossed with olive oil, garlic, and fresh herbs, tender on the inside and perfect as a versatile side dish.

Ingredients

  • 1.5 lbs baby potatoes or Yukon gold potatoes, cut into even-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and cut the potatoes into even-sized pieces.
  3. In a large bowl, toss the potatoes with olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
  4. Spread the potatoes in a single layer on the prepared baking sheet.
  5. Roast for 25–35 minutes, turning halfway through, until golden brown and crispy.
  6. Remove from the oven and let cool slightly before serving.

Notes

  • Add paprika or garlic powder for extra flavor.
  • Swap herbs for oregano, parsley, or dill depending on preference.
  • Sprinkle Parmesan cheese during the last 5 minutes of roasting for a cheesy twist.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in oven or air fryer to maintain crispiness.
