Ingredients

    1 cup whole wheat flour
    1 cup bread flour
    1/2 cup rolled oats
    1/4 cup sunflower seeds
    1/4 cup flaxseeds
    2 tablespoons chia seeds
    1 teaspoon salt
    2 tablespoons olive oil

Instructions

Activate Yeast: In a large bowl, combine warm water, honey, and yeast. Let sit for 5-10 minutes until foamy.

  1. Mix Dry Ingredients: In another bowl, whisk together whole wheat flour, bread flour, oats, sunflower seeds, flaxseeds, chia seeds, and salt.
  2. Combine and Knead: Add dry ingredients and olive oil to the yeast mixture. Stir until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  3. First Rise: Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  4. Shape Loaf: Punch down the dough, shape into a loaf, and place it in a greased loaf pan.
  5. Second Rise: Cover and let the dough rise again for 30-45 minutes until puffy.
  6. Bake: Preheat oven to 375°F (190°C). Bake for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped.
  7. Cool and Serve: Remove from the pan and cool on a wire rack before slicing.
