Hearty Goulash with Vegetables

A hearty one-pot goulash made with ground beef, elbow macaroni, and a medley of vegetables in a savory tomato-based sauce. This family-friendly meal is comforting, nutritious, and perfect for weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 bell peppers (any color), diced
  • 2 carrots, diced
  • 1 medium zucchini, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 3 cups beef broth or water
  • 2 cups elbow macaroni
  • 2 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • Optional: 1 cup shredded cheese
  • Optional: fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and garlic; sauté 2–3 minutes until fragrant.
  2. Add ground beef and cook until browned. Drain excess fat if needed.
  3. Stir in bell peppers, carrots, and zucchini. Cook 5–6 minutes until vegetables begin to soften.
  4. Add diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Stir and bring to a simmer.
  5. Stir in elbow macaroni, reduce heat to medium-low, cover, and cook 12–15 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
  6. Taste and adjust seasoning. Add more broth if needed.
  7. Serve hot, topped with shredded cheese and parsley if desired.

Notes

  • Don’t overcook the pasta—check around the 10-minute mark.
  • For freezing, cook pasta separately and add when reheating.
  • Use ground turkey or chicken for a lighter version.
  • Kidney beans or black beans make great protein additions.
  • Beef broth gives the richest flavor, but chicken or vegetable broth also works.
