Ingredients
1 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
1.5 lbs ground beef
2 tbsp tomato paste
2 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1 tsp dried oregano
Salt and pepper, to taste
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
1 (28 oz) can diced tomatoes
1 cup beef broth
Optional toppings: shredded cheese, sour cream, green onions, jalapeños
Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
Add garlic and cook for another minute until fragrant.
Add ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
Stir in tomato paste, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1–2 minutes to bloom the spices.
Add diced tomatoes, drained kidney and black beans, and beef broth. Stir to combine.
Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes, stirring occasionally.
Taste and adjust seasoning as needed. Serve hot with desired toppings.
Notes
For extra depth, replace 1/2 cup of beef broth with a dark beer.
Simmer longer uncovered to thicken the chili if desired.
