Ingredients

  1. 1 cup oat flour
    1/2 cup canned pumpkin puree
1/2 cup almond milk (or milk of choice)
    2 large eggs
    1 tablespoon maple syrup (optional)
    1 teaspoon vanilla extract
    1 teaspoon baking powder
    1/2 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1/4 teaspoon ground cloves
    1/4 teaspoon ginger powder
    Pinch of salt
Coconut oil or butter for cooking

Instructions

In a large mixing bowl, whisk together oat flour, baking powder, cinnamon, nutmeg, cloves, ginger, and salt.

  1. In a separate bowl, combine the pumpkin puree, almond milk, eggs, maple syrup (if using), and vanilla extract. Whisk until smooth.
  2. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix—lumps are fine!
  3. Heat a skillet or griddle over medium heat and lightly grease with coconut oil or butter.
  4. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown on both sides.
  5. Repeat with the remaining batter.
  6. Serve warm with your favorite toppings like more maple syrup, chopped nuts, or a dollop of Greek yogurt.

Notes

  • Swap the cheese: For a different flavor, try using mozzarella, gouda, or a mix of cheeses.
  • Add cooked chicken, bacon, or chickpeas for a protein boost.
  • To make this gluten-free, use gluten-free pasta and substitute the regular flour with gluten-free flour or cornstarch.
  • If you prefer a spicier version, add cayenne pepper or hot sauce to the cheese sauce.
  • For a vegan version, use dairy-free cheese and plant-based milk such as almond or oat milk.
