Healthy Homemade Mac and Cheese is a lighter take on the classic comfort food, made with whole grain pasta, low-fat milk, Greek yogurt, and sharp cheddar cheese. It’s creamy, flavorful, and perfect for a wholesome meal or side dish.

Ingredients

  • 8 oz whole wheat or high-protein pasta (elbow, shells, or rotini)
  • 1 cup low-fat milk or unsweetened almond milk
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/4 cup plain Greek yogurt (or low-fat cream cheese)
  • 1 tbsp olive oil or light butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Dijon mustard (optional)
  • Salt and pepper to taste
  • Optional add-ins: 1 cup steamed broccoli, peas, spinach, or grilled chicken

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. In a saucepan over medium heat, warm olive oil or light butter. Add garlic powder, onion powder, and Dijon mustard if using.
  3. Pour in milk and bring to a gentle simmer, stirring constantly.
  4. Reduce heat to low, then stir in shredded cheddar cheese until melted and smooth.
  5. Remove from heat and stir in Greek yogurt until creamy.
  6. Add the cooked pasta to the sauce and stir to combine.
  7. Season with salt and pepper. Mix in optional add-ins if using.
  8. Serve warm and enjoy immediately.
