Ingredients

2 cups cooked, shredded chicken breast
1/2 cup Greek yogurt (or a mix of yogurt and light mayo)
1/2 cup diced celery
1/4 cup finely chopped red onion
1 tsp Dijon mustard
1 tbsp fresh lemon juice
Salt, to taste
Black pepper, to taste
2 tbsp chopped fresh parsley or dill
Optional: 1/4 cup diced apples, grapes, or chopped nuts

Instructions

  1. In a mixing bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, salt, and black pepper to create the dressing.
  2. Add the shredded chicken, celery, red onion, and parsley or dill to the bowl.
