Ingredients

  1. 3 ripe bananas, mashed
    1/4 cup maple syrup or honey
    2 large eggs
    1/4 cup plain Greek yogurt or applesauce
    1 teaspoon vanilla extract
    1 1/2 cups whole wheat flour or oat flour
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon cinnamon
    1/4 teaspoon salt
    Optional: 1/2 cup chopped nuts or dark chocolate chips

Instructions

Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.

  1. In a large bowl, combine mashed bananas, maple syrup, eggs, Greek yogurt, and vanilla extract. Mix until smooth.
  2. In another bowl, whisk whole wheat flour, baking soda, baking powder, cinnamon, and salt.
  3. Gradually add dry ingredients to wet ingredients, stirring until just combined. Fold in nuts or chocolate chips if using.
  4. Pour batter into prepared loaf pan and smooth the top.
  5. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool before slicing.
