Hash Brown Casserole is a creamy, cheesy, and hearty comfort food made with crispy hash browns, savory cheese, and a flavorful creamy sauce. It’s a perfect side dish for any meal, from family dinners to potlucks.

Ingredients

  1. 1 (30 oz) bag frozen hash browns, thawed
1 can (10.5 oz) cream of chicken soup (or cream of mushroom for a vegetarian option)
    1 cup sour cream
    1/2 cup melted butter
    2 cups shredded cheddar cheese
    1 small onion, diced (optional)
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    1/4 teaspoon salt
    1/4 teaspoon black pepper
1 cup crushed cornflakes (or breadcrumbs) for topping (optional)

Instructions

Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking dish with cooking spray or butter.

  1. In a large mixing bowl, combine the thawed hash browns, cream of chicken soup, sour cream, melted butter, shredded cheddar cheese, diced onion (if using), garlic powder, onion powder, salt, and pepper. Stir everything together until well combined.
  2. Transfer the hash brown mixture into the prepared baking dish and spread it evenly.
  3. If you prefer a crunchy topping, sprinkle the crushed cornflakes or breadcrumbs evenly over the top.
  4. Bake in the preheated oven for 45-50 minutes, or until the casserole is hot and bubbly, and the top is golden brown.
  5. Let the casserole sit for a few minutes before serving. Enjoy!

Notes

  • For a vegetarian version, use cream of mushroom soup instead of cream of chicken.
  • For added flavor, mix in vegetables like peas, corn, or spinach into the casserole.
  • If you like a spicy kick, try adding diced jalapeños or a pinch of red pepper flakes.
