This Guinness Cheddar Risotto is a creamy, comforting dish that blends the deep with sharp Irish cheddar for a rich and indulgent twist on classic risotto. Perfect for St. Patrick’s Day or any special occasion, this dish is easy to make, full of bold flavors, and pairs wonderfully with grilled meats or roasted vegetables!

Ingredients

  • 1 ½ cups Arborio rice
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth, warmed
  • ½ cup heavy cream (optional, for extra creaminess)
  • 1 cup sharp Irish cheddar cheese, shredded
  • Salt and pepper, to taste
  • 1 tsp fresh thyme (optional, for garnish)

Instructions

  • Warm the Broth – Heat the broth in a saucepan over low heat and keep it warm.
  • Sauté Aromatics – In a large pan, heat butter and olive oil over medium heat. Add onions and cook until softened, then stir in garlic.
  • Toast the Rice – Add Arborio rice, stirring for 1-2 minutes until the grains are lightly toasted.
  • Cook the Risotto – Add warm broth, one ladle at a time, stirring frequently and allowing each addition to absorb before adding more. Repeat until the rice is tender and creamy (about 20 minutes).
  • Finish with Cheese – Stir in cheddar cheese until melted. Add salt, pepper, and a splash of cream if desired.
  • Serve and Garnish – Top with fresh thyme and an extra sprinkle of cheddar. Serve warm

  • For a deeper flavor, replace some broth with more Guinness.
