Guinness Beef Chili is a hearty, flavorful dish that brings together the deep, malty richness of Guinness with tender beef and a medley of spices. This comforting chili is perfect for cold nights, game days, or any time you’re craving a satisfying bowl of warmth. The addition of Guinness enhances the depth of flavor and helps tenderize the meat, making it incredibly delicious.

Ingredients

  • 1 ½ lbs ground beef or cubed beef chuck
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, diced (optional for heat)
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 ½ cups beef broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar (optional, to balance flavors)

Instructions

  • Brown the Beef – In a large pot or Dutch oven, cook the beef over medium-high heat until browned. Drain any excess fat if necessary.
  • Sauté Aromatics – Add diced onion, garlic, red bell pepper, and jalapeño (if using) to the pot. Cook until softened.
  • Add Spices and Tomato Paste – Stir in chili powder, smoked paprika, cumin, and oregano. Cook for 1-2 minutes to release the flavors.
  • Deglaze the Pot – Pour in the beef broth and scrape the bottom of the pot. Let it simmer for a few minutes.
  • Add Remaining Ingredients – Stir in diced tomatoes, tomato paste, Worcestershire sauce, and brown sugar (if using). Bring to a simmer.
  • Simmer – Reduce heat to low, cover, and let it simmer for at least 1 hour, stirring occasionally. The longer it cooks, the better the flavors meld.
  • Add Beans – In the last 20 minutes, stir in kidney and black beans. Let them warm through.
  • Adjust Seasoning – Taste and adjust seasoning with salt, pepper, or more spices as needed.
  • Serve – Enjoy hot with your favorite toppings like shredded cheese, sour cream, green onions, or cornbread.

Notes

  • For a spicier chili – Add extra jalapeños, cayenne pepper, or hot sauce.
  • To thicken the chili – Let it simmer uncovered for a longer time, or mash some of the beans to naturally thicken it.
  • Vegetarian option – Replace beef with lentils or plant-based crumbles, and use vegetable broth instead.
  • Make-ahead – Chili tastes even better the next day as the flavors have time to meld together.
