Ground Turkey Teriyaki Stir Fry is a quick and flavorful dish featuring lean ground turkey cooked with colorful vegetables in a savory teriyaki sauce. This healthy stir fry is perfect for busy weeknights and pairs well with rice or noodles.

Ingredients

  1. 1 lb ground turkey
    2 tablespoons vegetable or sesame oil
    1 red bell pepper, sliced
    1 cup broccoli florets
    1 cup snap peas or green beans
    3 cloves garlic, minced
    1 teaspoon grated fresh ginger
    1/4 cup low-sodium soy sauce or tamari
    2 tablespoons honey or maple syrup
    1 tablespoon rice vinegar
    1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
    2 green onions, sliced
    Sesame seeds for garnish (optional)

Instructions

Heat oil in a large skillet or wok over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spoon, about 5-6 minutes. Remove from skillet and set aside.

  1. In the same skillet, add garlic, ginger, bell pepper, broccoli, and snap peas. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  2. Return turkey to the skillet. In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch slurry. Pour sauce over the turkey and vegetables.
  3. Cook, stirring frequently, until sauce thickens and coats everything evenly, about 2-3 minutes.
  4. Remove from heat and garnish with sliced green onions and sesame seeds if desired.

  1. Substitute ground chicken or beef for turkey.
  2. Use frozen mixed vegetables for convenience.
  3. Add crushed red pepper flakes for heat.
  4. Serve over cauliflower rice for a low-carb option.
