Ingredients

  • 1 lb lean ground turkey
  • 1 tablespoon olive oil or sesame oil
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, minced
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned or thinly sliced
  • 2 green onions, chopped (for garnish)
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, and water to make the teriyaki sauce. Set aside.
  2. Heat oil in a large skillet or wok over medium-high heat.
  3. Add ground turkey and cook for 5–7 minutes, breaking it up until browned and cooked through.
  4. Stir in garlic and ginger and cook for 1–2 minutes until fragrant.
  5. Add broccoli, bell pepper, and carrots. Stir-fry for 4–5 minutes until vegetables are crisp-tender.
  6. Pour the teriyaki sauce over the meat and vegetables. Stir to coat evenly.
  7. Simmer for 2–3 minutes until the sauce thickens and becomes glossy.
  8. Remove from heat and garnish with green onions and sesame seeds if desired.
  9. Serve hot over rice, noodles, or in lettuce wraps.
