Ground Turkey Soup is a healthy, protein-rich, and comforting one-pot meal made with lean ground turkey, vegetables, and flavorful broth. It’s quick, easy, and perfect for weeknight dinners or meal prep.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon tomato paste (optional)
  • 6 cups chicken or vegetable broth
  • 1 zucchini, diced or 2 cups baby spinach (optional)
  • 1 teaspoon dried Italian herbs
  • 1 bay leaf
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup cooked pasta, rice, or beans (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 3–4 minutes until translucent.
  2. Add garlic, carrots, and celery. Cook for another 4–5 minutes, stirring occasionally.
  3. Add ground turkey and cook until browned, breaking it up with a spoon.
  4. Stir in tomato paste (if using), diced tomatoes, dried herbs, salt, and pepper. Cook for 2–3 minutes to blend the flavors.
  5. Pour in broth and add bay leaf. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
  6. Add zucchini or spinach if using and simmer for another 5 minutes until tender.
  7. Stir in cooked pasta, rice, or beans (if using) and heat through.
  8. Taste and adjust seasoning. Remove bay leaf before serving.
  9. Serve hot, garnished with fresh parsley.

  • For a low-carb version, skip pasta/rice and add extra non-starchy veggies like cabbage or cauliflower.
  • Use lean ground turkey (93%) for better texture and flavor.
  • Freeze soup without grains for best texture — add pasta/rice after reheating.
