Ingredients

  1. 1 lb ground turkey
  2. 1 tbsp olive oil
  3. 1 small onion, chopped
  4. 1 bell pepper, chopped
  5. 1 zucchini, chopped
  6. 1 cup cherry tomatoes, halved
  7. 1/2 cup corn kernels (fresh, frozen, or canned)
  8. 2 cloves garlic, minced
  9. 1 tsp chili powder
  10. 1/2 tsp cumin
  11. 1/2 tsp paprika
  12. Salt and pepper to taste
  13. Fresh parsley or cilantro for garnish (optional)

Instructions

Heat olive oil in a large skillet over medium heat.

  1. Add the chopped onion and bell pepper to the skillet and sauté for about 3-4 minutes until they start to soften.
  2. Add the ground turkey to the skillet and cook, breaking it apart with a spoon, until browned and fully cooked (about 5-7 minutes).
  3. Add the zucchini, cherry tomatoes, and corn, stirring to combine. Cook for another 5-6 minutes, allowing the vegetables to soften.
  4. Stir in the garlic, chili powder, cumin, paprika, salt, and pepper. Continue cooking for an additional 2-3 minutes, allowing the spices to meld with the turkey and veggies.
  5. Remove from heat and garnish with fresh parsley or cilantro, if desired.
  6. Serve immediately, or let cool and store for meal prep.
