Ingredients
Ground beef
Olive oil
Onion, finely chopped
Garlic, minced
Taco seasoning
Salt
Black pepper
Tomato paste
Water
Flour tortillas
Cheddar cheese, shredded
Monterey Jack cheese, shredded
Sour cream, for serving
Salsa, for serving
Guacamole (optional)
Fresh cilantro, chopped (optional)
Instructions
Heat olive oil in a skillet over medium heat.
Add the chopped onion and cook for about 3–4 minutes until softened.
Stir in the minced garlic and cook for about 30 seconds until fragrant.
Add the ground beef and cook until browned, breaking it apart with a spoon.
Drain excess fat if necessary.
Stir in taco seasoning, tomato paste, water, salt, and black pepper.
Simmer for about 3–4 minutes until the mixture thickens slightly.
Heat a clean skillet over medium heat and place one tortilla in the pan.
Sprinkle shredded cheese over half of the tortilla.
Add a portion of the seasoned ground beef on top of the cheese.
Sprinkle additional cheese over the beef and fold the tortilla in half.
Cook for about 2–3 minutes per side until the tortilla is golden and the cheese melts.
Remove from the skillet and slice into wedges.
Serve with sour cream, salsa, guacamole, and chopped cilantro if desired.
Notes
Add diced jalapeños or chili flakes for a spicier version.
Include vegetables such as bell peppers, corn, or mushrooms for added texture.
Ground turkey or chicken can be used instead of beef.
