Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce (red or green)
  • 1 can (4 oz) diced green chilies (optional)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1012 corn tortillas
  • 2 cups shredded cheddar cheese (or Monterey Jack blend)
  • 1/2 cup sour cream (for serving, optional)
  • Fresh cilantro (for garnish, optional)

Instructions

  • Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  • Add Aromatics: Stir in chopped onion and garlic. Cook for 3-4 minutes until softened.
  • Season the Mixture: Add cumin, chili powder, paprika, green chilies (if using), salt, and pepper. Stir in 1/2 cup enchilada sauce and remove from heat.
  • Prepare the Tortillas: Warm tortillas in a skillet or microwave to prevent cracking.
  • Assemble the Enchiladas: Preheat oven to 375°F (190°C). Spread a thin layer of enchilada sauce in a 9×13-inch baking dish. Fill each tortilla with beef, roll tightly, and place seam-side down in the dish.
  • Add Sauce and Cheese: Pour remaining enchilada sauce over the tortillas and sprinkle with cheese.
  • Bake: Cover with foil and bake for 20-25 minutes. Remove foil and bake for another 5 minutes for a crispy top.
