Ground Beef Burrito Skillet

A quick and hearty one-pan burrito-style skillet loaded with seasoned ground beef, rice, beans, corn, and melty cheese.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • Salt and pepper, to taste
  • Fresh cilantro, optional
  • Lime wedges, optional

Instructions

  1. Cook ground beef in a large skillet over medium heat until browned; drain excess fat.
  2. Add diced onion and minced garlic; cook until softened.
  3. Stir in taco seasoning.
  4. Add uncooked rice, beef broth, black beans, corn, and diced tomatoes with green chiles; stir to combine.
  5. Cover and simmer on low for 18–20 minutes, until rice is tender and liquid is absorbed.
  6. Uncover, stir, and season with salt and pepper as needed.
  7. Sprinkle cheese over top, cover, and allow it to melt for 2–3 minutes.
  8. Garnish with cilantro and serve with lime wedges if desired.

Notes

  • Add bell peppers or jalapeños for extra flavor.
  • Substitute ground turkey or chicken for beef.
  • Use pinto beans instead of black beans if preferred.
  • Add salsa for a saucier consistency.
  • Top with sour cream, avocado, or crushed tortilla chips.
