Ingredients

  1. 1 lb ground beef
4 cups broccoli florets (fresh or frozen)
    1 onion, sliced thinly
    2 garlic cloves, minced
1-inch piece of fresh ginger, grated or minced
3 tbsp soy sauce (or tamari for gluten-free)
    1 tbsp hoisin sauce (optional)
    1 tbsp sesame oil
1 tbsp vegetable oil for cooking
1 tbsp rice vinegar (optional, for added tang)
1 tsp honey or brown sugar (optional, for sweetness)
1/2 tsp crushed red pepper flakes (optional, for spice)
    Salt and pepper to taste
Cooked rice or noodles, for serving

Instructions

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.

  1. Add the sliced onion to the skillet and sauté for 2-3 minutes until softened.
  2. Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.
  3. Add the broccoli florets to the skillet. If you’re using fresh broccoli, sauté for about 5 minutes until they’re slightly tender. If using frozen broccoli, add them straight to the pan and cook for about 5 minutes, or until heated through and tender.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce (if using), sesame oil, rice vinegar, honey, and crushed red pepper flakes.
  5. Pour the sauce mixture over the beef and broccoli, stirring well to coat. Let it cook for another 3-4 minutes until everything is well combined and heated through.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve the stir fry over cooked rice or noodles for a complete meal.

Notes

  1. Vegetarian Option: Replace the ground beef with ground tofu or tempeh for a vegetarian or vegan option.
  2. Add More Veggies: Include bell peppers, carrots, mushrooms, or snap peas for extra color and nutrition.
  3. Spicy Stir Fry: Add extra chili paste, more crushed red pepper flakes, or a dash of sriracha to spice up the dish.
  4. Low-Carb Option: Serve the stir fry with cauliflower rice for a low-carb alternative to regular rice.
  5. Storage: Leftover Ground Beef & Broccoli Stir Fry can be stored in an airtight container in the refrigerator for up to 3 days.
  6. Reheating: Reheat in a skillet over low heat, adding a splash of water or broth if necessary to prevent the stir fry from drying out. You can also reheat in the microwave for 1-2 minutes, stirring halfway through.
