Ground Beef and Veggie Hobo Casserole is a hearty, layered dish with seasoned beef, tender vegetables, and melty cheese baked until golden and bubbly. Inspired by campfire hobo packs, it’s a cozy, family-friendly comfort meal made in the oven.

Ingredients

  1. 1 lb ground beef
  2. 1 onion, chopped
  3. 2 garlic cloves, minced
  4. 3 medium potatoes, thinly sliced
  5. 2 carrots, sliced
  6. 2 cups green beans or mixed vegetables (fresh or frozen)
  7. 1 can (10.5 oz) cream of mushroom or cream of celery soup
  8. 1 1/2 cups shredded cheddar cheese
  9. 2 tbsp olive oil or butter
  10. Salt and pepper, to taste
  11. 1/2 tsp paprika (optional)
  12. 1/2 tsp dried thyme or Italian seasoning (optional)

Instructions

Preheat oven to 375°F (190°C).

  1. In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat. Season with salt, pepper, paprika, and thyme if using.
  2. Grease a 9×13-inch baking dish. Layer potato slices evenly on the bottom.
  3. Spread cooked beef mixture over potatoes.
  4. Add a layer of carrots and green beans or mixed vegetables.
  5. Spread cream of mushroom soup evenly over the top.
  6. Cover with foil and bake for 45–50 minutes, until vegetables are tender.
  7. Remove foil, sprinkle cheddar cheese over the casserole, and bake uncovered for 10–15 minutes until melted and bubbly.
  8. Let rest 5 minutes before serving.
