Ingredients

  • 2 boneless skinless chicken breasts, halved to make 4 portions
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 sandwich buns
  • 4 lettuce leaves
  • 4 tomato slices
  • 12 pickle slices
  • 1/4 cup mayonnaise
  • 1 tbsp hot sauce

Instructions

  1. Pound the chicken breasts to an even thickness to help them cook evenly.
  2. In a bowl, mix olive oil, paprika, cayenne pepper, garlic powder, onion powder, chili powder, salt, and black pepper.
  3. Coat the chicken evenly with the spice mixture and let it marinate for 10–15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Grill the chicken for about 5–7 minutes per side until fully cooked and slightly charred.
  6. Lightly toast the sandwich buns on the grill while the chicken finishes cooking.
  7. In a small bowl, mix mayonnaise and hot sauce to create a spicy mayo.
  8. Spread the spicy mayo on the bottom half of each bun.
  9. Place the grilled chicken on the bun and top with lettuce, tomato slices, and pickles.
  10. Close the sandwich with the top bun and serve immediately.
