Grilled Lemon-Herb Chicken is a bright and flavorful dish featuring juicy chicken marinated in fresh lemon juice, olive oil, and aromatic herbs. Grilled to perfection, it develops a lightly charred exterior while staying tender and moist inside.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme or oregano
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped herbs, salt, and black pepper.
  2. Place the chicken in a shallow dish or resealable bag and pour the marinade over it.
  3. Refrigerate and marinate for at least 30 minutes, up to 4 hours.
  4. Preheat the grill to medium-high heat and lightly oil the grates.
  5. Remove the chicken from the marinade, letting excess drip off.
  6. Grill for 5–7 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C).
  7. Remove from the grill and let rest for 5 minutes before serving.
