Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 tablespoon lime zest
  • 3 tablespoons olive oil
  • 2 teaspoons chili powder
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. In a large bowl or zip-top bag, mix together lime juice, lime zest, olive oil, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
  2. Add the chicken and toss to coat evenly. Marinate in the refrigerator for at least 30 minutes, up to 8 hours.
  3. Preheat grill to medium-high heat and lightly oil the grates.
  4. Remove chicken from the marinade and grill for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for a few minutes before slicing.
  6. Garnish with chopped cilantro and serve with your favorite sides.
