Grilled Chicken Drumsticks are juicy, flavorful, and perfectly charred, making them a classic go-to for barbecues, weeknight dinners, or summer cookouts with minimal prep and bold flavor.

Ingredients

  • 23 lbs chicken drumsticks (about 812 pieces)
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • Optional: 1/2 tsp chili powder or cayenne pepper

Instructions

  1. In a large bowl or zip-top bag, mix olive oil, garlic, lemon juice, paprika, onion powder, salt, pepper, and optional chili powder.
  2. Add chicken drumsticks and toss to coat evenly. Cover and marinate in the fridge for at least 1 hour or up to overnight.
  3. Preheat grill to medium-high heat (375°F to 400°F).
  4. Oil the grill grates lightly to prevent sticking.
  5. Place drumsticks on the grill and cook for 25–30 minutes, turning every 5–7 minutes for even cooking.
  6. Use a meat thermometer to ensure internal temperature reaches 165°F.
  7. Remove from grill and let rest a few minutes before serving.

Notes

  • Marinate longer for deeper flavor, up to overnight.
  • Use indirect heat if the grill flares up too much.
  • Oven option: bake at 400°F for 35–40 minutes, flipping halfway.
  • Finish over direct heat or under the broiler for extra crispy skin.
