Instructions

For the chicken: Preheat your grill or grill pan over medium-high heat. Rub the chicken breasts with olive oil and season with garlic powder, paprika, salt, and pepper. Grill the chicken for 6-7 minutes per side until it reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing into thin strips.

  1. For the Caesar dressing: In a small bowl, combine the mayonnaise, Dijon mustard, lemon juice, minced garlic, Parmesan cheese, and anchovy paste (if using). Whisk until smooth and season with salt and pepper to taste.
  2. For the sandwich: While the chicken is resting, butter one side of each bread slice. Toast the bread slices, buttered-side down, in a skillet over medium heat until golden brown and crispy.
  3. Assemble the sandwich: Spread a generous amount of Caesar dressing on one slice of toasted bread. Layer with chopped romaine lettuce, sliced grilled chicken, and grated Parmesan cheese. Optionally, add croutons for extra crunch.
