Grilled Bruschetta Chicken is a vibrant, flavorful dish featuring juicy grilled chicken topped with a fresh, zesty tomato and basil bruschetta. Ingredients

  1. 4 boneless, skinless chicken breasts
    2 tablespoons olive oil, divided
    Salt and freshly ground black pepper, to taste
    3 large ripe tomatoes, diced
    1/4 cup red onion, finely chopped
    2 cloves garlic, minced
    1/4 cup fresh basil, chopped
    1 tablespoon balsamic vinegar
    Optional: shredded mozzarella or Parmesan cheese for topping

Instructions

Preheat grill to medium-high heat.

  1. Brush chicken breasts with 1 tablespoon olive oil and season with salt and pepper.
  2. Grill chicken for 6-8 minutes per side, or until internal temperature reaches 165°F (74°C). Remove from grill and let rest.
  3. In a bowl, combine diced tomatoes, red onion, garlic, basil, balsamic vinegar, remaining olive oil, salt, and pepper. Mix well.
  4. Spoon bruschetta mixture generously over each chicken breast.
  5. Optional: sprinkle with shredded mozzarella or Parmesan cheese.
  6. Serve immediately.
