Instructions

  • Preheat Oven – Set your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  • Mix Dry Ingredients – In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  • Combine Wet Ingredients – In another bowl, whisk together oil, buttermilk, eggs, vinegar, vanilla extract, and green food coloring until well combined.
  • Make the Batter – Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  • Bake – Fill cupcake liners about ⅔ full and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let the cupcakes cool completely.
  • Prepare the Frosting – Beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, mixing until fluffy.
