Green Beans Almondine is a classic French-inspired side dish made with crisp-tender green beans and toasted almonds in a buttery lemon sauce. It’s a fresh, flavorful, and elegant addition to both everyday meals and special occasions.

Ingredients

  • 1 lb fresh green beans, trimmed
  • 1/3 cup slivered or sliced almonds
  • 2 tbsp butter
  • 1 tbsp olive oil (optional)
  • 2 cloves garlic, minced (optional)
  • 1 tbsp lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1 tsp lemon zest (optional, for garnish)
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Bring a pot of salted water to a boil. Add green beans and cook for 3–4 minutes until tender-crisp. Drain and transfer to an ice bath. Drain again and set aside.
  2. In a large skillet, melt butter (and olive oil if using) over medium heat.
  3. Add almonds and toast for 2–3 minutes, stirring, until golden and fragrant.
  4. Stir in garlic, if using, and cook for 30 seconds.
  5. Add blanched green beans and toss to coat. Sauté for 2–3 minutes until heated through.
  6. Drizzle with lemon juice and season with salt and pepper to taste.
  7. Garnish with lemon zest and chopped parsley if desired. Serve warm.

  • Blanching preserves the color and texture of green beans—don’t skip it.
  • Use slivered or sliced almonds and toast until just golden.
