Green Bean Mushroom Casserole is a comforting, creamy dish that combines tender green beans, savory mushrooms, and a rich sauce topped with crispy fried onions. Perfect for holidays or family dinners, this casserole is easy to prepare and can be customized for dietary needs.

Ingredients

  1. 1 lb fresh green beans, trimmed (or 2 cans of green beans, drained)
  2. 2 cups fresh mushrooms, sliced (or 1 can of mushroom slices, drained)
  3. 1/2 cup onion, finely diced
  4. 2 cloves garlic, minced
  5. 1 cup heavy cream (or half-and-half for a lighter option)
  6. 1/2 cup chicken or vegetable broth
  7. 2 tablespoons unsalted butter
  8. 1 tablespoon all-purpose flour (for thickening)
  9. 1 teaspoon Worcestershire sauce (optional)
  10. 1/2 teaspoon salt (adjust to taste)
  11. 1/4 teaspoon black pepper
  12. 1 cup crispy fried onions (plus extra for topping)

Instructions

Blanch the Green Beans: Boil salted water and cook green beans for 3-4 minutes until bright green and tender-crisp. Drain and set aside.

  1. Prepare the Mushroom Sauce: In a skillet, melt butter over medium heat. Sauté onion and garlic for 3-4 minutes. Add mushrooms and cook for 5-7 minutes until browned.
  2. Make the Cream Sauce: Sprinkle flour over the mushrooms and stir for 1-2 minutes. Slowly add cream and broth, stirring until thickened. Add Worcestershire sauce (if using), salt, and pepper.
  3. Combine Green Beans and Sauce: Add blanched green beans to the skillet, stirring to coat in the creamy mushroom sauce.
  4. Assemble the Casserole: Transfer mixture to a greased 9×13-inch baking dish and top with 1 cup crispy fried onions.
  5. Bake: Preheat oven to 350°F (175°C) and bake for 20-25 minutes until bubbling and golden brown on top.
  6. Garnish and Serve: Add extra fried onions on top and serve hot.

Notes

  1. For a vegan version, use non-dairy butter, plant-based milk, and vegetable broth. Replace the fried onions with a vegan version.
  2. For extra flavor, add shredded cheese like cheddar or Parmesan to the sauce or sprinkle on top before baking.
  3. For a gluten-free casserole, substitute the flour with a gluten-free flour blend or cornstarch.
  4. You can add other vegetables like carrots or bell peppers to make this dish even heartier.
