Greek yogurt chicken salad is a healthy, protein-rich twist on the classic chicken salad. Made with creamy Greek yogurt instead of mayo, it’s packed with lean chicken, crunchy veggies, and a hint of sweetness from fruit.

Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 1/2 cup plain Greek yogurt
  • 1 celery stalk, chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup grapes or apples, chopped
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp fresh parsley or dill (optional)

Instructions

  1. Prepare cooked chicken by shredding or chopping into bite-sized pieces.
  2. In a large bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and pepper until smooth.
  3. Add celery, red onion, and grapes or apples to the bowl and mix to combine.
  4. Add the shredded chicken and stir until evenly coated in the dressing.
  5. Cover and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled.
