Greek Salad (Horiatiki) is a fresh and vibrant dish that combines crisp vegetables, tangy feta cheese, and briny olives, all dressed in a simple yet flavorful olive oil-based dressing. It’s a light, healthy dish perfect for any occasion.

Ingredients

  1. 2 large tomatoes, cut into wedges
  2. 1 cucumber, sliced or cut into half-moons
  3. 1 red onion, thinly sliced
  4. 1 bell pepper (green or red), sliced
  5. ¼ cup Kalamata olives (or green olives)
  6. 1 cup feta cheese, cut into large blocks or cubes
  7. 2 tablespoons olive oil
  8. 1 tablespoon red wine vinegar
  9. 1 tablespoon fresh lemon juice
  10. 1 teaspoon dried oregano
  11. Salt and pepper to taste
  12. Fresh parsley, chopped (for garnish)

Instructions

In a large mixing bowl, combine the tomatoes, cucumber, red onion, and bell pepper.

  1. Add the Kalamata olives and feta cheese on top of the vegetables.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the salad, gently tossing to combine, making sure the vegetables and cheese are well-coated.
  4. Garnish with freshly chopped parsley for a pop of color and flavor.
  5. Serve immediately or refrigerate for 10-15 minutes to allow the flavors to meld before serving.
