Greek Fries are crispy French fries topped with crumbled feta, fresh herbs, lemon, and a drizzle of olive oil for a Mediterranean-inspired twist. Served with tzatziki, they’re fresh, flavorful, and perfect as a snack or side dish.

Ingredients

  • 4 large Russet potatoes or 1 bag frozen French fries
  • Vegetable oil (for frying or baking)
  • Salt, to taste
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon zest
  • 12 tablespoons extra virgin olive oil
  • Optional: 1/4 cup chopped red onion
  • Optional: 1/4 cup chopped tomatoes
  • Optional: 1/4 cup chopped kalamata olives
  • Optional: tzatziki sauce, for serving

Instructions

  1. Wash and peel (optional) the potatoes. Cut into fries and soak in cold water for 30 minutes. Drain and pat dry.
  2. Fry at 300°F (150°C) for 4–5 minutes, then rest. Increase oil to 375°F (190°C) and fry again for 2–3 minutes until golden and crispy. Alternatively, bake at 425°F (220°C) for 25–30 minutes, flipping halfway. If using frozen fries, cook per package instructions until crisp.
  3. Place hot fries in a bowl. Season with salt, drizzle with olive oil, and sprinkle with lemon zest. Toss to coat.
  4. Top with crumbled feta, chopped herbs, and optional toppings like red onion, tomatoes, or olives.
  5. Finish with a squeeze of lemon juice and serve immediately with tzatziki sauce on the side or drizzled on top.

  • Use block feta in brine for the best flavor and texture.
  • Apply toppings just before serving to maintain crispiness.
  • Serve with tzatziki, hummus, or garlic yogurt dip for extra flavor.
  • Try adding grilled protein like chicken or lamb to make it a full meal.
