Greek chicken skewers are juicy, flavorful pieces of marinated chicken infused with lemon, garlic, and oregano, then grilled to perfection. A Mediterranean favorite perfect for meals, gatherings, or meal prep.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into cubes
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
  2. Add chicken cubes to the marinade, toss to coat, and marinate for at least 30 minutes or up to a few hours.
  3. If using wooden skewers, soak them in water for 15–20 minutes.
  4. Thread marinated chicken pieces onto skewers.
  5. Preheat grill or grill pan to medium-high heat.
  6. Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.
  7. Remove from grill, rest for a few minutes, and serve with lemon wedges or tzatziki.

Notes

  • Marinate chicken longer for deeper flavor.
  • Use metal skewers for convenience—no soaking needed.
  • Oven and air fryer methods also work well if grilling isn’t an option.
  • Add veggies like bell peppers or onions to the skewers for variety.
  • Serve with pita, rice, or Greek salad for a complete meal.
