Grapefruit Mint Popsicles are a refreshing, tangy frozen treat that combines the bright citrus flavor of grapefruit with the coolness of fresh mint. These popsicles are perfect for cooling off on hot days and offer a healthy, flavorful snack.

Ingredients

  1. 2 cups fresh grapefruit juice (about 2-3 grapefruits)
    1/4 cup fresh mint leaves, finely chopped
    2 tablespoons honey or agave syrup (optional)
    1 tablespoon fresh lemon or lime juice
    Water as needed to adjust consistency

Instructions

In a pitcher, combine grapefruit juice, chopped mint leaves, honey or agave syrup, and lemon or lime juice. Stir well to mix.

  1. Taste and adjust sweetness or tartness as desired.
  2. Pour the mixture into popsicle molds, leaving a little space at the top.
  3. Insert popsicle sticks and freeze for at least 4-6 hours or until fully frozen.
  4. To unmold, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.

Notes

  1. Add slices of fresh grapefruit or lemon inside the molds for texture and decoration.
  2. Use sparkling water instead of still water for a fizzy popsicle.
  3. Mix in other citrus juices like orange or lime for a citrus medley.
  4. Infuse with a splash of ginger juice for a spicy kick.
  5. Add a pinch of salt to enhance the citrus flavors.
