Ingredients

For the Chicken Filling:

  • 500g cooked chicken (shredded)
  • 1 celery stalk, finely chopped
  • 1 green onion, finely sliced
  • 75g walnuts, roughly chopped
  • 3 tbsp finely chopped cornichons or dill pickles
  • 1 tbsp fresh dill, finely chopped

For the Creamy Sauce:

  • 160g whole egg mayonnaise
  • 160g sour cream (or full-fat yogurt)
  • 2 tsp Dijon mustard
  • 1 tbsp lemon juice (or white wine vinegar)
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • ¾ tsp kosher salt
  • ¼ tsp black pepper

For the Sandwiches:

  • 20 slices white sandwich bread (preferably day-old)
  • Salted butter, for spreading

Instructions

. Shred the Chicken

  • Use a stand mixer with a paddle attachment or shred by hand into small, bite-sized pieces.

2. Prepare the Sauce

  • In a medium bowl, whisk together mayonnaise, sour cream, Dijon mustard, lemon juice, onion powder, garlic powder, salt, and black pepper until smooth.

3. Combine Ingredients

  • Mix shredded chicken, celery, green onion, walnuts, pickles, and dill with the dressing. Stir well to coat.

4. Prepare the Bread

  • Lightly butter one side of each bread slice.

5. Assemble the Sandwiches

  • Spoon the chicken mixture onto the unbuttered side of half the bread slices.
  • Top with the remaining bread slices, buttered side facing out.

6. Serve & Enjoy!

  • For a classic presentation, trim the crusts and cut sandwiches diagonally
