Ingredients

For the Muffin Batter:

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ cup unsalted butter, melted
  • ¾ cup milk
  • 2 eggs
  • 1 ½ tsp vanilla extract

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar

For the Topping:

  • ¼ cup cinnamon sugar mixture (granulated sugar + cinnamon)
  • Optional: Melted white chocolate for drizzle

Instructions

  1. Preheat & Prepare

    • Preheat oven to 375°F (190°C).
    • Line a 12-cup muffin tin with paper liners.
  2. Mix Dry Ingredients

    • In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and cinnamon.
  3. Combine Wet Ingredients

    • In a separate bowl, mix melted butter, milk, eggs, and vanilla extract until well combined.
  4. Make the Batter

    • Pour the wet ingredients into the dry ingredients. Stir until just combined (do not overmix).
  5. Prepare the Cream Cheese Filling

    • In a small bowl, beat cream cheese and powdered sugar until smooth.
  6. Assemble the Muffins

    • Fill each muffin liner halfway with batter.
    • Add a spoonful of cream cheese filling in the center.
    • Cover with additional batter, filling the liners about ¾ full.
  7. Add Topping & Bake

    • Sprinkle cinnamon sugar over the muffins.
    • Bake for 18-20 minutes, or until golden brown and a toothpick (inserted into the muffin, not the filling) comes out clean.
  8. Cool & Serve

    • Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.
    • Drizzle with melted white chocolate if desired.
