Ingredients
2 fresh golden kiwis, peeled and diced
1/2 cup fresh blueberries
1/2 cup feta cheese, crumbled
1 baguette or crusty bread, sliced into 12 pieces
2 tbsp olive oil
Fresh mint or basil leaves (optional, for garnish)
1 tbsp honey or balsamic glaze (optional, for drizzling)
Salt and pepper, to taste
Instructions
Preheat oven to 375°F (190°C).
Slice the baguette into ½-inch rounds and brush each slice lightly with olive oil.
Place slices on a baking sheet and toast for 8–10 minutes until golden and crisp. Let cool slightly.
In a small bowl, gently toss diced golden kiwi and blueberries. Season lightly with salt and pepper if desired.
Top each toasted bread slice with crumbled feta.
Spoon the kiwi-blueberry mixture over the cheese.
Drizzle with honey or balsamic glaze, if using.
Garnish with fresh mint or basil and serve immediately.
Notes
Assemble just before serving to avoid soggy bread.
Use block feta for the best flavor and texture.
Try goat cheese or ricotta as a creamy alternative.
For a dairy-free option, use plant-based feta or cashew cheese.
