Ingredients

  • 2 fresh golden kiwis, peeled and diced
  • 1/2 cup fresh blueberries
  • 1/2 cup feta cheese, crumbled
  • 1 baguette or crusty bread, sliced into 12 pieces
  • 2 tbsp olive oil
  • Fresh mint or basil leaves (optional, for garnish)
  • 1 tbsp honey or balsamic glaze (optional, for drizzling)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the baguette into ½-inch rounds and brush each slice lightly with olive oil.
  3. Place slices on a baking sheet and toast for 8–10 minutes until golden and crisp. Let cool slightly.
  4. In a small bowl, gently toss diced golden kiwi and blueberries. Season lightly with salt and pepper if desired.
  5. Top each toasted bread slice with crumbled feta.
  6. Spoon the kiwi-blueberry mixture over the cheese.
  7. Drizzle with honey or balsamic glaze, if using.
  8. Garnish with fresh mint or basil and serve immediately.

Notes

  • Assemble just before serving to avoid soggy bread.
  • Use block feta for the best flavor and texture.
  • Try goat cheese or ricotta as a creamy alternative.
  • For a dairy-free option, use plant-based feta or cashew cheese.
