Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a skillet, heat olive oil or butter over medium heat. Sauté garlic for 30 seconds, then add spinach and cook until wilted. Let cool slightly.
- In a bowl, mix cooked spinach, shredded chicken, cream cheese, shredded cheese, salt, pepper, and optional spices.
- Roll out puff pastry on a lightly floured surface into a rectangle.
- Spread chicken-spinach mixture evenly over the pastry, leaving a small border at the edges.
- Roll up tightly from one long side into a log. Chill for 10–15 minutes if soft.
- Slice into 1-inch pinwheels and place cut-side up on prepared baking sheet.
- Brush tops with beaten egg.
- Bake for 18–22 minutes, or until puffed and golden brown.
- Cool slightly before serving warm.
