Ingredients

  • 16 oz potato gnocchi
  • 1 tablespoon olive oil
  • 1 tablespoon butter or vegan butter
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 3/4 cup heavy cream or plant-based cream
  • 1/4 cup parmesan cheese or vegan parmesan, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme or parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions.
  2. Once the gnocchi float to the surface, drain them and set aside.
  3. Heat olive oil and butter in a large skillet over medium heat.
  4. Add the sliced mushrooms and cook until they release their moisture and begin to brown.
  5. Stir in the minced garlic and cook for about 1 minute until fragrant.
  6. Pour in the vegetable broth and let it simmer for a few minutes.
