Ingredients
1 lb potato gnocchi (fresh, refrigerated, or shelf-stable)
1 lb Italian sausage (mild or spicy), casings removed
1 small onion, diced
3 cloves garlic, minced
1 can (14.5 oz) crushed tomatoes or 1 1/2 cups tomato sauce (or 1 cup heavy cream for creamy version)
1 tbsp olive oil
2 cups fresh spinach or kale (optional)
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
2 tbsp chopped fresh basil or parsley (for garnish)
Grated Parmesan cheese (optional, for serving)
Instructions
Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
Add diced onion and sauté until softened, about 3–4 minutes. Stir in garlic and cook for another minute.
Add crushed tomatoes or cream, and bring to a simmer. Season with salt, pepper, and red pepper flakes if using.
Stir in uncooked gnocchi. Cover and cook for 5–7 minutes, stirring occasionally, until gnocchi is tender.
Add spinach or kale if using and stir until wilted, about 1–2 minutes.
Adjust seasoning to taste. Sprinkle with Parmesan cheese and fresh herbs before serving.
