Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite‑sized pieces
  • 1/2 cup gluten‑free all‑purpose flour
  • 2 large eggs, whisked
  • 1 cup gluten‑free breadcrumbs or crushed gluten‑free cereal
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Cooking spray or olive oil

Instructions

  1. Cut chicken into bite‑sized pieces.
  2. Set up three bowls: one with flour, one with whisked eggs, and one with a mix of gluten‑free breadcrumbs, Parmesan (if using), salt, pepper, garlic powder, and paprika.
  3. Dredge each chicken piece in flour, then dip into egg, then coat in breadcrumb mixture, pressing gently to adhere.
  4. Place coated chicken pieces on a baking sheet or in an air fryer basket. Spray lightly with cooking spray or drizzle with olive oil.
  5. Oven: Bake at 400°F (200°C) for 15–20 minutes, flipping halfway through.
  6. Air Fryer: Air fry at 380°F (190°C) for 10–12 minutes, shaking halfway through.
