Ingredients

2 chicken breasts, boneless and skinless

2 tablespoons olive oil

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon grated fresh ginger

1 tablespoon rice vinegar

2 garlic cloves, minced

4 cups chicken broth

2 teaspoons miso paste

2 packs ramen noodles (discard the seasoning packet)

1 tablespoon sesame oil

2 green onions, chopped

1 tablespoon sesame seeds

Optional toppings: soft-boiled eggs, sliced chili, spinach, or bok choy

Instructions

  • Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper and cook for 6-8 minutes on each side, until golden brown and fully cooked. Set chicken aside to rest.

  • In the same skillet, add soy sauce, honey, ginger, rice vinegar, and garlic. Stir and cook for 2-3 minutes on low heat until the sauce thickens.

  • In a large pot, bring chicken broth to a simmer. Stir in miso paste until dissolved. Add ramen noodles and cook according to package instructions (about 3-4 minutes).

  • Slice the chicken into thin strips while the noodles cook.

  • Once noodles are ready, divide them into bowls. Drizzle the ginger glaze over the noodles and top with sliced chicken.

  • Drizzle sesame oil over the ramen and garnish with green onions, sesame seeds, and optional toppings (soft-boiled eggs, chili, spinach, or bok choy).

  • Serve immediately and enjoy!

  • To make this dish vegetarian, replace chicken with tofu or tempeh.

  • For a spicier kick, add chili paste or red pepper flakes to the ginger glaze.
