Tender carrots marinated in a bold blend of garlic, vinegar, herbs, and spices for a tangy, savory, and aromatic side dish.

Ingredients

  • 1 lb carrots, peeled and sliced into rounds or sticks
  • 34 cloves garlic, minced
  • 3 tbsp olive oil
  • 3 tbsp white wine vinegar or apple cider vinegar
  • 1 tbsp lemon juice (optional)
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano or dried parsley
  • Fresh parsley, chopped (for serving)
  • Red pepper flakes (optional)

Instructions

  1. Peel and slice the carrots into rounds or sticks.
  2. Bring a pot of water to a boil and cook the carrots until tender-crisp. Drain and set aside.
  3. Whisk together olive oil, vinegar, lemon juice, garlic, salt, pepper, paprika, and dried herbs.
  4. Add warm carrots to the marinade and toss to coat.
  5. Transfer to a container and refrigerate for at least 2 hours.
  6. Taste and adjust seasoning before serving.
  7. Garnish with fresh parsley and red pepper flakes if desired.

Notes

  • Marinate longer for deeper flavor—overnight is best.
  • Use smoked paprika for extra depth.
  • If oil solidifies in the fridge, let sit at room temperature before serving.
